Warm Potato Salad Recipe
Ingredients
750g (1-1/2 lb)new potatoes,washed and scrubbed
salt
Freshly ground black pepper
Grated rind and juice of 1 lemon
1/2 Teaspoon light brown sugar
3 Spring onions,trimmed and minced
3 Tablespoons olive oil
1 Tablespoon chopped thyme
1 Clove garlic,peeled and crushed
Preparation Method
Cook the new potatoes in boiling salted water until just tender about 8 to 10 minutes.Meanwhile,put the lemon rind and juice,brown sugar,spring onions,olive oil,thyme and garlic into a shallow pan,and heat through until the mixture is just bubbling.Season to taste.Drain the cooked new potatoes thoroughly and toss immediately in the prepared dressing.Leave to stand for 4 to 5 minutes to give the potatoes the chance to absorb the flavor of the dressing,and then serve while still warm.
