Tomato Vinaigrette Dressing
Ingredients
2 Ogen or charities melons
4 Tomatoes, skinned
3 Kiwi fruited, peeled and sliced
1 Tablespoon chopped mixed herbs (e.g. chives, mint parsley)
4 Tablespoons honey and lemon dressing
2 Tablespoons pumpkin seeds (optional)
Preparation Method
Cut the melons in half and discard the seeds. Scoop the flesh into balls, using a melon bolero cut into cubes; serve the shells. Cut each tomato into 8 wedges and discard the seeds. Place the melon in a bowl with the tomatoes, kiwi fruit and herbs. Pour over the dressing and toss well. Spoon the mixture into the melon shells and sprinkle with pumpkin seeds, if using.
