Guacamole

METRIC/IMPERIAL

2 large very ripe avocados
juice of 1 lemon
4 tomatoes,skinned,deseeded and chopped
1 small onion,peeled and grated
1 clove garlic,peeled and crushed
1/4 teaspoon Tabasco
salt
freshly ground black pepper
1 small lettuce (optional)

Cut the avocado pears in half and remove the stones.Scoop out the avocado flesh into a bowl and immediately pour over the lemon juice to prevent discoloration.
Mash the avocado well,then add the remaining ingredients except the lettuce,and beat well until smooth.Alternatively,put all the ingredients in a blender and work to a smooth puree.Transfer to a serving bowl or individual plates,lined with lettuce leaves.Serve the guacamole immediately with toasted bread or crudites.
