Fresh Tomato Soup

Ingredients

1 Tablespoon polyunsaturated vegetable oil
1 Large onion, peeled and finely chopped
2 Cloves garlic, peeled and crushed
450g/1 lb ripe tomatoes, skinned and chopped
300 ml/1/2 pint vegetable stock
2 Basil springs, chopped
Salt
Freshly ground black pepper

Directions

Heat the oil in a large saucepan and fry the onion and garlic gently. Add the tomatoes to the onion with the vegetable stock, basil, salt and pepper to taste. Simmer for 10 minutes and, if wished, serve sprinkled with chopped parsley.
