Curry Dressing
Ingredients
8 Medium leeks
Dressing:
1 Teaspoon curry powder
1 Teaspoon made mustard
1 Teaspoon brown sugar
2 Teaspoons grated onion
2 Tablespoons white wine vinegar
8 Tablespoons sunflower oil
Salt
Freshly ground black pepper
Preparation Method
Cut the leeks to a suitable length to fit the plates; split lengthways as far as necessary to clean thoroughly. Cook them in boiling salted water for 6 to 8 minutes or until just tender, then drain. Cool slightly and arrange on 4 serving plates. Place all the ingredients for the dressing in a leeks and chill before serving.
