Beef Salad Recipes

Ingredients

450g (1 lb) lean beef (boned sirloin or topside,
Rump or fillet steak)
Finely grated rind and juice 1 large orange
1 Tablespoon wine vinegar
1 Bay leaf
Salt
Freshly ground black pepper
200ml (1/3 pint) water or stock
100g (4 oz) mushrooms, wiped and sliced
1 Lettuce
1 Large carrot, peeled and grated
50g (2 oz) bean sprouts

Preparation Method

Put the beef in a pan with the orange rind and juice, vinegar, bay leaf and salt and pepper to taste. Pour on the water or stock and bring to the boil. Lower the heat, cover and simmer for 5 minutes for rare beef, 10 minutes for well done beef. Add the mushrooms and simmer for a further 2 minutes. Remove the beef and mushrooms from the pan and leave to cool. Boil the cooking liquid until reduced to 150ml/1/4 pint. Leave to cool. Then taste and adjust the seasoning. Cut the beef into strips, then place in a bowl with the mushrooms. Pour over the reduced cooking liquid and leave to marinate for at least 1 hour, turning occasionally. Arrange the lettuce leaves on a serving dish. Pile the beef mixture in the centre, then strain over the marinade. Mix together the carrots and bean sprouts and arrange around the beef. Serve cold.
